Recipe to prepare baked Eggplants 2017/03/15

 

Today I’ll share how to prepare baked eggplants, in an easy and fast way while you prepare the other appetizers

Ingredients

  • 1 eggplant for 2 people
  • 250 grams of mozzarella cheese
  • 250 grams of cherry tomatoes
  • 50 grams of capers
  • Tomato sauce (the necessary amount)
  • 1 garlic clove
  • Olive oil
  • Salt

Cut the eggplant in thin sheets, put grain salt on them and let them rest for 25 minutes in a colander

Rinse and place them over absorbent paper to remove the excess of water

On a hotplate or pan, cook the eggplant without oil until golden, this is the secret of the recipe

Mince the garlic and fry it with a dash of olive oil, add the tomato sauce, turn off the heat

In a container, add a dash of olive oil, place a layer of eggplants, mozzarella, capers, the sauce. As an option you can add cherry tomatoes, repeat the process several times

Preheat the oven at 180°C, once it’s hot place the container covered with foil for about of 25 minutes, then remove the foil and leave it for another 20 minutes

Serve hot and accompanied by spaghetti and a salad
