Lemon pie in a jar Recipe 07/22/2015

 

A colorful way to present desserts, tarts or cakes inside a glass jar

It is very attractive and also practical for a garden party because it allows the guests to taste their portion when being standing

We can buy jars specially to prepare this dessert or better yet recover marmalade or honey jars that are transparent, with the purpose of comfortably fitting the cake in. In case that the jar has a narrow opening, you must use a pastry piping bag to insert the cream. This lemon pie recipe is fresh and fast. We don’t need to bake! 

Recipe for 4 jars (250 grams)

  • 250 gr of Philadelphia cream cheese 
  • 150 gr of dry cookies 
  • The juice of 2 lemons 
  • 1 cup of condensed milk 
  • 3 tablespoons of melted butter 
  • Mint leaves for decoration 


Materials: 

  • 1 plastic bag for containing foods
  • 4 glass jars 
  • Ribbons, strings, labels for decorating the jars

*Note: for this recipe I’ve used homemade condensed milk: you put one cup of milk inside a casserole, add 3/4 of a cup of cane sugar and 20 grams of butter. Let it condense over low heat, without boiling the milk. Lastly, whip the mixture for a minute with an immersion blender or a mixer. If you want it denser, you can add one tablespoon of powdered milk or substitute the liquid milk for powdered milk, then add a cup of water. 

To prepare the tart we place the cookies inside the plastic bag and we crush them with our hands or with the help of a wooden mallet, without pulverizing them.

Add the butter and mix until making a sandy paste

We mix the lemon juice with the cream cheese and the condensed milk (homemade or store-bought). Refrigerate the mixture for 20 minutes. If you want more defined layers, we leave the mixture to solidify in the freezer for 15 minutes before continuing 

We take a jar and put in around 3 tablespoons of the crushed cookies or 1/3 of the jar and arrange without compacting too much, then add the cream up to 3/4 of the jar.

Then we add 2 or 3 tablespoons of cookies, we arrange forming levels, then again we pour the cream. Remember that if the cream is liquid the layers will be less defined, it’s a matter of taste. Once the jar is full, we decorate the crust with lemon zest and some mint leaves 

We repeat the same process for the other portions, we decorate the jars, put them in the fridge and take them only at the moment of serving. If necessary, you can keep them fresh inside a plastic container with ice, that can be arranged on top of the serving table or the candy table (Candy Bar)
