Italian cuisine recipe: ricotta gnocchi 2022/07/06

 

Gnocchi originated around the 16th century when potatoes from America were imported.

In fact, the original recipe includes eggs, flour and potatoes but to cook the latter it takes about 40 minutes.

Today I suggest a version without potatoes, quicker to prepare but equally delicious.

Ingredients for 4 persons are:

  • 250 gr cow milk ricotta
  • 2 eggs
  • 150-200 gr of flour
  • Salt to taste
  • Butter to taste
  • Sage leaves
Many recipes suggest sieving the ricotta and loose the excess of liquid, I prefer to use it alone. In a bowl, add the ricotta, eggs, salt and flour little by little and mix until forming a homogeneous and elastic mass. Extend the flour over the surface of the working table to facilitate the operation.
Divide the mass in equal parts and start kneading with your hands to stretch it, sometimes I let my girls do it because they have so much fun. Meanwhile, I cut this pasta sticks in small pieces.
Now the step that, in my opinion, make gnocchi what it is: striation. Take one gnoco at a time, place on the fork and slightly push it over the teeth with your thumb, rolling it. The gnocchi will be striated and thanks to the finger, an internal hole will form. You can see in the image the difference between before and after. Alternatively, you can find the gnocchi paddle in some stores of home products, but the fork method is the traditional one.
In the meantime, I recommend you put a pot with water over the stove. Striate all the gnocchi and place them on a tray sprinkled with flour and make sure they are not in contact with each other.
When the water is boiling, carefully put in the gnocchi. Soon they will come to the surface and that means they are fully cooked.
With a strainer or skimmer, move them to a pan with a bit of butter and two sage leaves. Season with salt and end cooking for a couple of minutes at low heat.
The gnocchi are ready, enjoy your meal!
