Recipe to prepare Rice with Artichokes 18/01/2023

 

Today’s recipe includes a typical Italian ingredient, the artichoke.

Ingredients for 8 persons

  • 400 grs of rice
  • 4 – 5 artichokes
  • Garlic
  • 1 or 2 vegetable dices
  • Olive oil
  • 1 liter of water
  • Salt and pepper

Choose fresh artichokes, the leaves must be firm and lusty.

Remove the external leaves, with a knife or a peeler, remove the external skin and cut the stem in slices.

Fill a bowl with water and lemon juice and add another lemon cut in 4 pieces. Cut the artichokes in 8 parts and place them in the water to avoid them from turning dark.

Aside in a pot, boil 1 liter of water with one or two of your preferred vegetable dices or if you prefer boil water with the vegetables you like (garlic, onion, parsley, etc.)

Remove the lemon and strain the artichokes very well. In a large skillet, at medium heat, stir-fry 2 garlic cloves with a little olive oil, when hot, fry the artichokes, add a little of salt.

Add the rice to the artichokes and fry until it is a little golden, then add the water with the spices little by little, always being careful that the water level covers the rice. Cooking with this procedure will create a delicious juice.

Follow the cooking time that the rice package recommends, rectify the salt. When the rice is ready, remove form heat and serve warm.

This is a first course dish that can be served with grated cheese (grana padano type), always optional, to enhance the flavor.
